We adore carbs – nothing makes us happier than spaghetti al dente, fluffy rice or a piece of thick toast straight from the bakery. As much as we love carbs, we knew it would do us some good to reduce our intake so we challenged ourselves to find alternatives! The hardest part was finding foods that would fill us up just as easily as pasta and bread.Thankfully, we discovered zoodles and cauliflower rice.
Zoodles, a.k.a. zucchini processed through a spiralizer so it looks like noodles, are an incredibly hearty and healthy alternative to pasta. 1 cup of cooked pasta has 43 grams of carbs. Zoodles on the other hand only has 4.6 grams of carbs! Zoodles are actually easier to prepare than pasta. First – head over to Amazon to pick up a spiralizer – there are lots of budget friendly options. Once you spiralize your zucchini, heat up some olive oil in a pan and stir fry the zoodles for a few minutes (or you can also blanch it). One of our favorite bloggers – Snixy Kitchen – created an awesome zoodle recipe for OmieBox – check out her recipe here.
My local farmer’s market is abloom with cauliflowers right now! This is a nutritional powerhouse – chock full of Vitamin C, B6 and Potassium . You won’t believe how easy it is to prepare cauliflower rice – all you need is a food processor.
Check out this easy to follow video by Kitchn. Serve it up plain, or add colorful veggies (corn, shredded carrots, frozen peas, diced bell peppers) to make fried rice or mexican rice!
