School may be out … but lunch? Lunch is never out. Whether yours are headed to camp or to the beach with Grandma, OmieBox is a great for year-round use. According to Smithsonian Magazine, hot liquids cool you down better than cold ones. But I don’t know anyone who, while sweating under a beating sun, thinks to themselves, “I could really go for some steaming hot soup right now.” So, here’s a roundup of recipes that can put your thermos’ super cool cool function to use, nourish, and refresh.
This watermelon gazpacho from Bon Appétit is not necessarily for kids, but mine slurp it up. (You might want to leave the jalapeño out depending on your kids’ spiciness tolerance. I also love this recipe because it makes great use of beautiful summer tomatoes and cucumbers. This soup goes great with grilled cheese!
This Treasure Hunt Pasta Salad from Real Simple is true to their brand — real simple. Plus, it’s a treasure hunt! I’m picturing my kids pouring the contents of their thermoses out on the ground looking for some treasure at the bottom of it. Unfortunate name, but thankfully, it’s really good pasta salad. You can make it in a flash, and it’s an easy base for adding other summer produce to like sweet corn or green beans. Just don’t tell your kids what it’s called.
This cool cucumber soup, again from Real Simple, is also a breeze to make. If you’re into the cucumber soup idea and you’re feeling a little ambitious, check out this Andrew Zimmern recipe in Food & Wine. I’d say the trick with these soups is to make sure to refrigerate overnight if possible!
