Hooray! The weather is almost not soul-crushing! And that means that spring produce is on its way. So, while we wait for summer’s vitamin D fix, we can start to replenish other nutrients (including vitamin U-can-be-outside-again-without-wanting-to-cry!). Here are a few of the most fun and inspired springtime produce recipes I’ve found around the interwebs:
Broccoli Pesto Pasta
This Broccoli Pesto Pasta from bon appétit is an unexpected hit. Broccoli and pesto might not be the most obvious combination, but it is delicious. Plus, I dig the simplicity of putting cherry tomatoes on tiny toothpick skewers as shown in the photograph! At least for mine, the more interactive the food, the more fun, and the more likely they are to eat it.
Shell peas have a short end of spring season, so I love to take advantage of it! This seasonal, cheesy pasta recipe from PopSugar uses other spring delights as well. It may not be the quickest to prepare but it is easy to make in a big batch. Described as an “adult mac and cheese,” it’s actually great for kids, too. Both rich and healthy!
Turkey Spinach Pinwheels
For a simpler, quicker option, these Turkey Spinach Pinwheels from Damn Delicious are super quick and easy to make and a great way to use fresh spring spinach. Also, I love that you can sub out the spinach for arugula, kale, or any other green.
