This pesto is high in protein, dairy free, gluten free and inexpensive. It can be used with pasta, over a pizza or a dip for vegetables.
Ingredients:
12 ounces extra firm tofu
2 cups chopped fresh basil
6 cloves garlic
1/4 cup olive oil
zest of one lemon
salt to taste
To Make: In a food processor puree all ingredients into smooth paste. Makes 2 cups.
Children will love using this pesto sauce to make this shaped pasta bake or pasta mold. It looks fancy and cuts like a cake.
